Black Bean recipes
Base recipe
Ingredients:
Bag of black beans - $1
Bell peppers - $0.60 each
Onion - $0.60
Garlic - $0.30
Salt, pepper, cumin, chili powder and other seasoning - $0.10
= $2.60 - $3.80
Directions: Soak the dried beans overnight in a large pot of water. Then drain and return to the large pot. Turn the heat to medium-high and add garlic, a chopped green pepper, red pepper, yellow pepper, and onion. Add salt, pepper, and cumin and stir. Add a box of broth (vegetable or chicken). Simmer for 6 hours on low heat. Last 30 minutes, add cumin and chili powder. (Can also use a crockpot or instapot)
Serving size = 6 for $3.80

Mix with breadcrumbs and form into patties - Black bean burgers
Smash and add to a pizza crust - Taco pizza topped with cheese, avocado salsa, and lettuce

Directions: Cook the beans following the recipe.

Spinach & Roasted Red Pepper Pasta
Serving size - 2.5 for $8
Ingredients:
Box of pasta - $1
Jar of roasted red pepper - $3
Garlic - $0.30
Salt & pepper (or any other seasonings) - $0.10
Spinach - $3
Some parmesan - $0.30
2 tbsp olive oil - $0.30
Directions: Cook the box of pasta according to package directions. In a separate pan, sauté the roasted red pepper and garlic, adding salt and pepper and any other desired seasoning. Add the spinach to the pan and cook until wilted. Drain the pasta and add a little olive oil. Add the parmesan cheese and pour the red pepper and spinach mixture on top. Add salt, pepper, and parmesan cheese to taste.
